Brut

Blanc de Blancs Rosé Les Vignes d'Autrefois Blanc de Blancs
1er Cru
Rosé de Saignée Prestige Millésimé

The Brut tradition is a subtle blending of three Champagne varieties and is representative of our terroirs. This Champagne comes from the Côteaux sud d’Epernay, Vallée de la Marne and Côte des Blancs. A fine and complex blending.

Cultural practices : traditional, done in a sustainable way and influenced by ecological methods. Average age of the vineyard: 28 years

Grape-varieties and vineyard:

  • 60% Pinot Meunier . Terroirs of Chavot-Courcourt, Mancy, Boursault, Vaudancourt, Le breuil. Many different soils with a dominant of silt, marl and clay. Chalky subsoils.
  • 30% Chardonnay . Terroirs of Chavot, Vaudancourt and Epernay. Soils with fine clay and a blend of limestone and alluvial deposits. Chalky subsoils.
  • 10% Pinot Noir . Old vines of Chavot. Soil fairly deep with an important presence of clay, flints and schists. Chalky subsoils.
  • 40% of which are reserve wines of past years kept in barrels

Method of vinification :

  • Grapes are picked up by hand when fully ripen, and traditionally pressed
  • Alcoholic fermentation in vats and barrels according to grape varieties and plots
  • Malolactic fermentation partly made
  • Ageing during 6 months and light filtration before bottling during the springs time

Disgorging and dosage :
disgorging "à la volée", and dosage à 7-8 Gr /L. Also available in Demi-sec at 38 Gr/L.

This Champagne has a regular ring of bubbles with a straw color. On the palate, the Brut Tradition develops fruity and floral notes with a final touch lightly honeyed and spicy. It is Champagne with an excellent stability and apt to age.
