- 100% Chardonnay . Terroirs of Chavot, Vaudancourt, Voipreux and Epernay. Limestone soils and sometime with a presence of fine silts and chalk in surface. Chalky subsoils.
- 40% of which are reserve wines of past years kept in barrels.
Method of vinification :
- Grapes are picked up by hand when fully ripen, and traditionally pressed
- Alcoholic fermentation in foudres and barrels with regular stirring of the lees
- Malolactic fermentation partly made
- Ageing during 6 months followed by a light filtration before bottling during the springs time
Disgorging and dosage :
disgorging « à la volée » (by hand), and dosage at 6-7 Gr/l. Also available in No Dosage - Brut Nature.
With a delicate straw yellow color and brilliant green tints, this Champagne offers an intense nose. Liveliness and delicacy are very present through floral, apple, pear and dry fruits notes. In the mouth, it develops sublime almond, brioche and white flowers aromas, which confers a remarkable intensity. The finish is delicate, full-bodied and fresh.

Sélection de Jacques Dupont - Le point – Décembre 2007 : Craie, citron, très pur, bouche tendre, vive, délicate, une pointe d'amertume de style pamplemousse ajoute de la fraîcheur. Un vin très droit, sans concession, harmonieux, bien situé entre gourmandise et fraîcheur. 16.5/20
